Your on the right track. The five positions used to time a modern wristwatch, say Rolex/Omega are as follows.
Dial up, dial down, crown down, crown left, crown up. Three position watches are timed in dial up, crown down and crown left.
The results are averaged and the target is +3.0 sec/day. Keep in mind that these are static positions and do not necessarily reflect how the watch will perform on the wrist.
The sixth position is crown right which is a very awkward position for you wrist to be in assuming your awake. A competent watchmaker will be able to make adjustments as needed to suit the wearing habits of the client. The subject of fine timing goes much deeper but this is the basic process for after sales service for any Swiss prestige brand.
